I adore Rachel's blog (okay, okay I adore Rachel, her blog is just a plus) and read it often.
On Mondays, she posts Mouthwatering Monday with linky love. I have never participated.
Until now.
Some of the best dishes I make are those in which I have limited items in the house & little time to get the meal out.
The result is often something that is one dish and as my hubs calls it "shovel food"
Last week's frantic toss everything into the skillet resulted in this...

It is super easy and you can have it on the table in less than 20 minutes.
You will need:
4 boneless skinless Chicken Breasts
About 1/4 bottle of Italian Dressing
Parm Cheese (we call it shakey cheese)
Frozen Spinach (thawed and squeezed)
A can of Hunt's Fire Roasted Diced Tomatoes
Mrs. Dash
Season Salt
Garlic
Cinnamon
Angel Hair Pasta
Get the water started for the pasta.
While the water is warming up cut your chicken breast into bite sized pieces.
Put those pieces in a bowl with some of the Italian Dressing.
After the chicken is cut up, heat up large skillet on med-high.
When warm (you want water to sizzle when dropped in it) dump the chicken & dressing into the skillet.
Add the spices (except the cinnamon) I just kind of shake it all over, but not too much.
Your water should be at a full boil, so add the pasta and cook to the directions on the package.
cook the chicken (which it will cook quickly) until it is nearly done, add the spinach, the can of tomatoes, some more italian dressing, a couple more shakes of cheese and finally about a tsp of cinnamon.
Turn to low, cover and by this time your noodles should be ready to drain.
Drain the noodles toss with the chicken goodness and serve.
